Roasted Sweet Potato with Turmeric Guacamole

We've all heard the health benefits of curcumin, the active ingredient in turmeric which studies have shown its ability to block the growth of certain types of tumors and reduce inflammation, but it can be hard to figure out how to incorporate into your diet.  And, once you do find ways to add it, you might not be absorbing the benefits if it isn't combined with two things:
+ oil and
+ freshly ground black pepper

Studies have shown that these two things make turmeric much more bioavailable to the body, otherwise, very little is absorb. 

By adding a touch of freshly ground black pepper and an oil (try unrefined coconut oil), you've just unlocked the nutrient door! 

Here's an easy, inexpensive recipe that is sooooo filling (it was the recipe my videographer liked the best after a full day of filming cooking segments:). 

40 minutes, serves 1
Set the oven to 400 degrees.  Pierce a few holes in a sweet potato.  Place in a glass, stone or ceramic pan and roast in the oven for 30-40 minutes or until easily pierced with a fork. 

While the sweet potato is cooking (you could also steam or saute it to reducing the cooking time), mash up one avocado with some salt, freshly ground black pepper, a teaspoon of turmeric and a squeeze of lemon juice. 

Slice the sweet potato open and top with the guacamole.  The warm + cool and the creaminess + the potato = a hugely satisfying dish!
